The legend of the meat sauce
The tied up legend to the famous Neapolitan meat sauce, settled also by the great de Phillip in one poetry of his from the title note 'or rrau'

'O rraù ca me piace a me
m' 'o ffaceva sulo mammà.
A che m'aggio spusato a te,

The recipe
The meat sauce is not the meat ca' pummarola. as it recites the poetry of Eduardo.
It is not of easy realization and besides to be tasty as that of the mother of the de Phillip asks for a long cooking.
Currently it is used to call meat sauce a juice of tomato in which is cooked some meat.
The meat sauce, as Eduardo recites, was cooked on a coal fornacella and had to cook for at least six hours!
The pot in which you/he/she should be cooked is a wide and low clay saucepan, and to stir again needs him/it the wood cucchiarella.
The Neapolitan meat sauce is the Sunday typical dish and base for other dishes as many tasty, as for instance the typical lasagna that to Naples you/he/she is prepared with the well of God during the period of Carnival.
Ingredients:
- 1 kg. of stew of calf,
- 2 middle onions,
- 2 liters trail of tomato,
- a spoon of assembled of tomato,
- 200 grs. of oil of olive,
- 6 tracchiulelles (ovverosia cost her of it of pig),
- 1/4 of liter of red wine preferably of Gragnano,
- basil,
- q.b climbs.
